Gluten-free Protein Pancakes

Ingredients:

  • 1 banana
  • 150 ml nut milk
  • 60 gr oats or oat flour
  • 30 gr protein powder
  • 1 tbsp ground flaxseed
  • 1 tsp baking soda
  • apple cider vinegar

Instructions

  1. Mix the tbsp of flaxseed with 3 tbsp of filtered water at let it sit for 15 minutes or until it becomes jelly.
  2. Add all ingredients to a kitchen machine or blender, except for the baking soda and apple cider vinegar. If you use oat flour it's even possible to stir with a hand mixer or wisk, if you mesh the banana first. 
  3. In a separate bowl mix the baking soda and vinegar. Add to the mixture and mix.
  4. Time to make your pancakes! Heat a skillet over medium heat with a bit of oil (we recommend using coconut oil) and pour some of the batter into a pan. Wait until one side is done, flip and repeat. 

Serve and enjoy!

TIP:

Add some toppings to your pancakes, like maple syrup, mulberries, coconut flakes, fresh fruit or pumpkinseeds. You can use the breakfast mix we sell at Nut House for a delicious all in one pancake topping.
