Let’s give a fun twist to the ‘plain’ chia pudding with pink pitaya, also known as dragon fruit ✨ This fruit is known for its many health benefits, for example for the skin. The high in Vitamin A contents help stimulate cell renewal for the skin and acts like an internal SPF, protecting us from the sun ☀️
🍴 Ingredients used:
- 3 tbsp chia seeds
- 3/4 cup nut milk
- 1 tbsp pink pitaya powder
- 2 tbsp maple syrup (or agave)
Toppings:
- Dried dragon fruit
- Granola
- Coconut flakes
👨🍳 Recipe
- First layer: To make the pink chia pudding: mix 1,5 tbsp chia seeds with half of the nut milk, pink pitaya powder and maple syrup. Set aside for at least 30 minutes.
- Second layer: To make the plain chia pudding: mix 1,5 tbsp chia seeds, with half of the nut milk and maple syrup and set aside for at least 30 minutes.
✨ Presentation
- Take a glass and put the dried dragon fruit at the bottom of the glass.
- Layer with plain chia pudding, granola, pink pitaya chia pudding, cacao nibs, coconut flakes and blueberries.
