Medjoul Energy Balls

This recipe is super easy, basic, yet delicious. This easy and delicious recipe proves that simple can be impressive. It's a perfect base for your culinary creativity – feel free to add your favorite ingredients and make it your own.

What do you need?

  • 200 grams Medjoul Dates
  • 1/2 cup raw nuts 
  • Food processor or high speed blender

Optional:

  • Pinch of salt

Instructions

  1. Remove the pit and crown from the dates.
  2. Add all the ingredients to the food processor and blend until the consistency sticks together. 
  3. Use your hands to roll balls from the dough. You can choose how big or small you would like the balls based on your appetite. We like balls between 25 - 30 grams. 

Place the balls in an airtight container in the fridge for up to 3 weeks or freeze for up to 3 months. 

Tips

  • Now you have the basic recipe and you can add anything you like. For example dried fruits, like mulberries, goji berries, inca berries, cranberries and the list goes on. Or what about using only 1 type of nut instead of a mix? Make it chocolaty by adding some cacao powder or turn them into protein balls by adding protein powder. Tweak the consistency by adding more or less dates as you go.
  • Are your a dates a bit hard? This can happen when they've been in the fridge. Get them out of the fridge 2 hours before making the energy balls.
  • Are the dates still a bit hard? Soak the dates in hot filtered water. (don't throw the water away! This water becomes deliciously sweet, perfect for making iced tea)
